CREAM OF LEFTOVER VEGGIE TRAY SOUP
We played cards at our neighbor’s house the other day. We told them in advance that Cory is vegan and I am raw vegan fruitarian, but that raw fruits and veggies work just fine for both of us. They prepared a beautiful spread of fruits and veggies, and I have to say that they did an amazing job considering it was their first time buying for “our kind.” We also brought Rambutans and Lychees for them to try. Even some Durian Cucumber Salad! They are meat and potatoes grill-out drinking and smoking people, so I have to say that they were VERY kind and open-minded to try new things.
Anyway, there were lots of leftovers so they sent us home with them. I don’t normally eat baby carrots and broccoli… so what to do with these supplies? Well, I took a young coconut and used the water and tender meat to blend with the carrots, broccoli, and celery to make CREAM OF LEFTOVER VEGGIE TRAY SOUP. I topped it with the grape tomatoes and diced sugar snap peas. I ate the peach and grapes on another day. ?The cantaloupe was cut way too early and was rock solid, so that was the only thing I didn’t repurpose.
